Raw Asparagus Salad with Yogurt Dip

Ingredients

  • 1 bunch of Sardeon asparagus
  • Juice of 1 lemon
  • 2 tablespoons of olive oil
  • Salt and black pepper

Yogurt Dipping Sauce

  • 1 cup of yogurt
  • 2 cloves of garlic, minced
  • Juice of half a lemon
  • Salt and black pepper

Instructions

  • Cut off the ends of the asparagus stalks and cut into thin slices.
  • Mix lemon juice, olive oil, salt and pepper in a bowl.
  • Toss the chopped asparagus with the sauce and leave it aside to marinate for a few minutes.
  • Meanwhile, combine yogurt, minced garlic, lemon juice, salt and pepper in a bowl for the yogurt dipping sauce.
  • Transfer the marinated asparagus to a serving plate and serve with the yogurt dip.
