Oven-Baked Artichokes and Asparagus

Ingredients

  • 1 bunch of asparagus
  • 3 fresh artichokes
  • 1 cup grated Parmesan or Kashar cheese
  • ¼ cup olive oil
  • 3–4 cloves garlic, crushed
  • Lemon juice
  • Salt
  • Black pepper

Instructions

  • Clean the artichokes and cut them into quarters. Toss with olive oil, lemon juice, crushed garlic, salt, and black pepper. Set aside to marinate.
  • Cut the asparagus into finger-length pieces and mix with olive oil, salt, and black pepper.
  • Combine the artichokes and asparagus in a baking dish. Bake until the vegetables begin to turn golden and tender.
  • Sprinkle with grated cheese and return to the oven. Bake until the cheese is melted and lightly golden, then serve.
