Ingredients
- 1 bunch of asparagus
- 3 fresh artichokes
- 1 cup grated Parmesan or Kashar cheese
- ¼ cup olive oil
- 3–4 cloves garlic, crushed
- Lemon juice
- Salt
- Black pepper
Instructions
- Clean the artichokes and cut them into quarters. Toss with olive oil, lemon juice, crushed garlic, salt, and black pepper. Set aside to marinate.
- Cut the asparagus into finger-length pieces and mix with olive oil, salt, and black pepper.
- Combine the artichokes and asparagus in a baking dish. Bake until the vegetables begin to turn golden and tender.
- Sprinkle with grated cheese and return to the oven. Bake until the cheese is melted and lightly golden, then serve.
